- 1 tsp Lime rind
- 1/4 Cup Lime juice
- 1/4 Cup Olive Oil
- 2 Cloves Garlic, minced
- 1 Jalapeno, finely chopped
- Salt & Pepper to taste
Whisk together all ingredients. Set aside.
- 2 Cups Cooked Black Beans or 1 (19 oz , 540ml can) black beans, drained and rinsed
- 2 Cups Cooked chickpeas or 1 (19 oz, 540ml can) chickpeas, drained and rinsed
- 2 Tomatoes chopped
- 2 Green Onions, chopped
- 1 Avocado, peeled and chopped
Combine all salad ingredients in large salad bowl. Add dressing and mix to combine. Refrigerate 1 hour before eating.
